Oven fried chicken


Ingredients
  • 6  skinless, boneless chicken breast halves 
  • 1 cup buttermilk
  • nonstick cooking spray
  • 1 1/4 cups crushed cornflakes
  • 1 teaspoon garlic powder or dried minced garlic
  • 1 teaspoon onion powder or dried minced onion
  • 1 teaspoon paprika
  • 1/2 teaspoon ground black pepper
Method
  • In a large resealable plastic bag, combine chicken and buttermilk. 
  • Seal bag and shake to coat chicken. 
  • Marinate in the refrigerator for 2 to 6 hours, shaking occasionally.
  • Preheat oven to 200°c. Line a baking sheet with foil; coat foil with nonstick cooking spray. 
  • Drain chicken, discarding excess buttermilk.
  • In another large resealable plastic bag, combine crushed cornflakes, garlic, onion, paprika, and pepper; seal bag.
  • Shake well to combine. 
  • Add chicken, one piece at a time, and shake the bag to coat the chicken well.
  • Place chicken on the prepared baking sheet.
  • Coat chicken with nonstick cooking spray. 
  • Bake, uncovered, for 20 to 25 minutes or until chicken is no longer pink .

Diabetic friendly foods

Yogurt


Yogurt is creamy, delicious, and good for you. 
An excellent source of calcium, which helps promote the health of bones and teeth as well as muscle and blood vessel function.
Yogurt is also a good source of vitamin B2 (riboflavin) and protein.
It also provides zinc, which can be deficient in some people with diabetes and aids in immune function and wound healing.
Probiotic yogurt contains health-promoting bacteria that some research has proposed is beneficial for digestive health, including lactose intolerance and irritable bowel syndrome. 
Yogurt's live cultures may also benefit immunity and improve cholesterol.
There are different yogurts and you can make your own from low fat milk.
You can make numerous low calorie diishes,drinks,smoothies,yogurt cheese etc.
I will be posting here yogurt recipes regularly.
Here is a smoothie recipe for starters.
This recipe has no sugar and you can omit salt too if you want.
It is filling and a super drink

Papaya smoothie


Make this smoothie and make it a habit,addiction and no need to woorry over it.
I have used papaya and yogurt with a pinch of salt,nothing else.
It is the healthiest,filling smoothie ever.
Use sugar/honey or scoop of icecream for kids.
Even people who doesn't like eating papaya will like it.
Ingredients
Papaya cut into cubes-2 cups

Yogurt(curds)-1 cup

Salt-1 pinch
Method
Use chiiled papaya and yogurt.
Blend until smooth and serve.
